Salmon Cakes

This is one of our favorite go to meals. It’s relatively quick and easy and our kids LOVE them.

You probably know that salmon has a lot of health benefits but I recently stumbled upon an article that I found extremely interesting from stating that the consumption of omega-3 from food or supplements could help to improve sleep quality in children. Salmon just happens to be rich in omega 3 fatty acids. And it also happens that we have been struggling with our 2 year old to sleep lately. So when I did some research on nutrition and sleep I automatically thought this recipe would be a great way to get some omega 3’s in our 2 year old to aid in his sleep quality.

You’ll also notice that when it comes to meals in our family, I love to mix in veggies any way I can. So you’ll see that in this salmon cake recipe I include lots of veggies with the salmon.

2 small carrots roughly chopped

1/2 yellow onion roughly chopped

1/2 green or red pepper roughly chopped

1 celery stalk roughly chopped

couple sprigs fresh parsley

1/8 cup preserved lemon

1 can (14.75 ounces) wild caught pink salmon

1 teaspoon dijon mustard

1 teaspoon worcestershire sauce

3 to 6 drops tobasco sauce or hot sauce of choice

3/4 cup bread crumbs* (You can toast slices bread and then process in food processor to make your own. I used a couple slices of my homemade spelt flour sourdough bread)

2 eggs lightly beat

1/2 cup heavenly garlic sauce or mayonnaise

sea salt and fresh ground pepper to taste

olive oil to cook salmon cakes

more garlic sauce if you’d like to top with with some

First, if making own bread crumbs, process toasted bread in food processor. Pour into mixing bowl.

Next, combine carrots, onion, pepper, celery, parsley in food processor and pulse two to three seconds until veggies looked more uniformly chopped. Pour into mixing bowl with bread crumbs.

Place salmon, preserved lemon, dijon mustard, worcestershire sauce, tobasco sauce in food processor.

Pulse until slightly mixed but not overly processed. Poor into mixing bowl with bread crumbs and veggies. Add eggs, garlic sauce and salt and pepper to taste. Form into small cakes.

Heat an iron skillet on medium heat with enough olive oil to coat pan. Place patties in pan and cook on both sides until evenly brown.

Serve with more garlic sauce over a bed or greens.

Bon Appetit and have a good night sleep! Emma

*if you want to go without bread crumbs, I have tried replacing them with walnuts with great success!
